Natural lactic acid fermentation is one of the oldest, easiest and healthiest ways to preserve food. It allows vegetables to retain more vitamins, minerals and enzymes while improving their flavor and digestibility. The Romans, Chinese and Japanese all used lactic acid fermentation extensively. It was also well know by seafarers that sauerkraut helped protect one from getting scurvy and other illnesses. Because of these benefits, and the ease of preparation in these Ohio Stoneware Crocks, lactic acid fermentation (pickling) is experiencing a revival today.
With the lid water lock system, worrying about dust and skimming slime off the top of your crock is a thing of the past. This system, along with the weight stones, make the Ohio Stoneware fermentation crocks much easier to use than open top stoneware pots, which must be tended often and very carefully. With these crocks you only need to check that the water in the gutter is topped off until you are ready to check to see if your kraut or pickles are done.
